Description

Mit dem Sauerkrauthobel wurde der Weißkohl in feine Streifen geschnitten. Diese Streifen wurden dann in einem Fass aus Steingut mit einem Holzstempel gestampft, bis der Saft das Kraut bedeckt. Das Fass wird dann weiter mit Salz und Lake gefüllt, um die Sauerstoffzufuhr zu unterbinden. Die Milchsäure im Kraut startet den Gährungsprozess.
